Lobster Fra Diavolo
two 2 1/2 pound lobsters
1/4 cup olive oil
2 cloves garlic
1 small onion chopped
salt and pepper to taste
32 oz. can tomatoes chopped
1/4 cup tomato paste dissolved in 1/4 cup water
1 cup white wine
1/2 to 1 tsp. hot red pepper flakes
3 Tbsp minced fresh parsley
2 tsp. dried oregano
Cut up the lobsters, taking the claws and cutting each body into 3 pieces. In a
large skillet cook the lobsters in the oil for 3 to 4 minutes turning them over
once or twice. When they turn red take them off and set aside Pour off most of
the fat and add the garlic. After 1 minute add the onion, salt and pepper. Raise
the heat and add the tomatoes, tomato paste and wine. Cook over very high heat
stirring for about 15 minutes. Season with pepper, parsley and oregano and
return the lobster to the pan. Cook over moderate heat for about 5 minutes
longer and adjust the seasonings. The sauce should be thick enough to pick up
with a fork. Serve over past or with I Italian bread for dipping. Serves 4.
