Lobster Noodle Salad
Yield: 4 Servings
5 oz Can of lobster (or fresh)
2 cup Cooked alphabet noodles
1/4 cup Chopped celery
3 Tbsp Stuffed olives, sliced
1 Tbsp Green onions, thinly sliced
Salt, sprinkle
1/3 cup Mayonnaise
1 Tbsp Cream or milk
1 tsp Lemon juice
4 Lettuce cups (or shredded)
2 Tomatoes in wedges
Salt and pepper, sprinkle
Combine lobster, noodles, celery, olives and onions in bowl. Sprinkle with salt.
In small bowl mix mayonnaise, cream and lemon juice. Add to salad.
Toss lightly. Arrange lettuce on plates. Spoon lobster mixture over lettuce with
tomato wedge for garnish. Sprinkle with salt and pepper.
