Lobster Salad Trinity
two 1 1/2 lb. live lobsters
1 Tbsp coarse grained mustard
1 Tbsp red wine vinegar
1 tsp water
1 Tbsp grated onion
2 Tbsp fresh lemon juice
1/4 tsp. sugar
1 Tbsp vegetable oil
1 Tbsp minced fresh parsley
3/4 cup chopped celery
2 Tbsp mayonnaise
1 tsp dry sherry
Boil and remove meat from lobsters. Chop into pieces and set aside. In a
separate bowl whisk together remaining ingredients except for celery mayonnaise
and sherry. Add lobster meat and chill 1 hour. Stir in the celery, mayonnaise,
sherry, and salt and pepper to taste. Spoon onto lettuce leaves or serve on
bread.
